Delicious pasta from Italy

Calamaratra pasta is commonly used for squid dishes, but I find it to be an incredibly versatile shape that works well with heart ragus, cheesy mushroom recipes, and other concoctions I come up with with whatever I have on hand. These short thick tubes cook up in about 15 to 20 minutes depending on how tender you like them. The shape reminded me of small canneloni tubes, so I put together my favorite canneloni filling (ground pork & hamburger mixed with parmesan, an egg, a pinch of nugmeg and salt) cooked it up, and rather than needing to stuff the tubes I simply mixed it all in and then covered it all in a moderate amount of bechamel, more parmesan, and a basil marinara sauce I had on hand and baked it for 25 minutes. Perfecto! The pasta held the sauce wonderfully and each bite included enough of the meaty cheesy filling to be just as delightful as eating stuffed canneloni - but without the extra time and effort of having to stuff the tubes! This is slightly expensive, but I never see it in my local stores and I appreciate that it's made from durum wheat which doesn't cause a sharp spike in my blood sugar!

Calamarata pasta is a new one for me, but I can see where they get the name from; it looks like slices of squid. Everything was delivered in good condition, with the pasta prepacked in its own box. The rings of pasta are on the large side, and because of this, it really demands a more substantial sauce. Garofalo produces quality pasta, I have used it many times, and this one is no exception. Once cooked, the taste and texture are what you would expect, with the pasta still having that little bit of chew. The cook time is 15 minutes, what you would expect from a larger pasta. I also like that the product is non-GMO.

I absolutely love this pasta! I’ve used both packs to make two full macarona béchamel bakes, and they performed beautifully. The calamarata shape holds sauce perfectly, soaking up the béchamel in between layers without getting mushy. The texture after cooking is delightfully al dente, with that firm, satisfying bite I hope for in quality Italian pasta.The one-ingredient durum wheat semolina feels authentic and robust, and the two-pack provides excellent value for anyone who cooks in generous portions (hello!). Highly recommended for pasta lovers out there!
