I've gotten other brands of Mung Beans for sprouting in the past, and this brand just doesn't match up. These beans are smaller, they take longer to sprout, and they smell "off" within a day of sprouting even with multiple rinses a day. They also start getting leaves almost immediately after sprouting, whereas with other brands there would be a couple days in between. With these, I have to have multiple smaller jars going at once, to be able to harvest the sprouts within a small window for use on my salads. I'll look for recipes to use these beans cooked to use them up.

I haven't had much luck sprouting these beans. They sprout, but even after a 24 hour soak and multiple days, I still see only minimal growth. It's been a while, but I used to sprout mung beans and eat them on a regular basis, so I'm leaning towards it being an issue with the beans. Still, a couple of people report that they sprout well so either it is my technique or maybe some of the packages have fresher beans than others. I haven't tried yet, but if I can't get them to sprout any better I'll just use them in soup and curry. They seem like they should be fine for that.
