I bought this knife for my old man, and he's a walleye coinsure and he was very happy with the gift. The guy catches his limit several times a week, and piles them high in his garage deep freezer. He sits for hours, after every trip, meticulously slicing, and filleting his prizes. He's done it since we were kids, and I saw the knife, it looked like a quality item from the description so I thought better give it a go? I'm glad I did because I think he's going to retire his old fillet knife this summer. I think its an upgrade to his fishing game and I really think he is happy with the knife.I did check it out myself and the blade is nicely crafted, thin, flexible (but not overly flexible) durable, and very sharp. Now, I know what you're going to say but for the sake of saying so and addressing that issue I'll just say it in as few words as possible. This is a fillet knife, it is designed in the fashion of just about every other angler's fillet knife I have ever seen. This isn't a culinarian's or chef's knife, the quality just isn't there, but if you're ok with using an angler's fishing knife in your kitchen I will tell you this will get the job done. The only disappointment I had with the item is the finishing, the handle had some random burrs on it and you can see that in specific areas on the hilt of the blade that the mass production process left a little to be desired, but by no means are any of these "deciding factors" when purchasing the knife so I'll just leave it at that.I am happy with the quality despite my own personal preference for hand made, or premium cutlery. I do definitely suggest this item. I specifically think that this item would be perfect for fishermen and hunters, as I've seen my dad using his fillet knives for butchering specific areas of other game he has sported. It is also a value, and giftable. The item comes packaged in proprietary branded molded and sealed plastic packaging with a tip guard to protect anyone from injury. This knife does not come with a sheath.Full disclaimer: We are a kill and eat family, we don't hunt for sport. Everything we kill is solely for the purpose of our own consumption. We save a lot of money throughout the various seasons here in Michigan hunting our own food and were grateful for the bounty. We don't stockpile, throw away, or sell anything, it is all for our own personal use and with moderation. With that being said, again, I highly suggest this item and I hope you've found this review helpful today. Thanks for reading.

It is a pretty knife as well as of great quality.

4.0 out of 5 stars Pretty fish knife

    F.C. · April 2, 2024

This fish knife filets the fish well. I cut up 4 mackerel Saba this weekend for friends and it works to gut the fish quite efficiently. It is very sharp so watch your fingers. It has a small tip for easy puncturing the skin of the fish and into the belly. Good knife for many types of fish and at a great price.

3.0 out of 5 stars Flexible blade, comfortable handle, but not very sharp

    J.C. · March 2, 2024

This is an inexpensive flexible fillet knife. The blade is flexible and the handle is comfortable to hold -- but the edge is not very sharp out of the box.The pattern is laser etching and not true Damascus, but I wouldn't reduce the rating based on this as I don't think they even tried to market this as a Damascus blade, but just wanted to laser etching to decorate the blade which is just a preference and fine. Main issue is really the dullness of the blade and pretty poor steel quality.

5.0 out of 5 stars Amorston 7 inch Fillet Knife

    J. · May 22, 2024

The Amorston seven-inch Fillet Knife is a nice inexpensive blade. The knife blade is pretty, fairly flexible and very sharp. The engraving on the blade gives the knife a nice look, and the plastic handle is smooth and fits well in hand. This knife is specifically designed for filleting fish. This is a working tool and is not a chief quality knife, but it is the perfect knife for fishermen and hunters. It will get the job done but is also inexpensive enough that no one has to worry about losing it. This fillet knife does not come with a sheath, rather it is sealed in plastic with a tip guard to protect anyone from injury. Ultimately this fillet knife is an excellent value--the quality you receive for the price is very impressive!

5.0 out of 5 stars Sharp and flexible

    X. · March 2, 2024

A fillet knife is a special purpose knife mostly for working on delicate fish. This one servers the purpose well, but requires some basic skills that can only be achieved with practice. Watch Gordon Ramsay break down a salmon and you know what I mean. This knife has all the required features: A long, narrow, sharp, and flexible blade and a very comfortable plastic handle. It is even permanently labeled as [18cm-7" fillet knife].The entire blade has a wavy pattern which seems to be a defining feature of Armorston knives. I don't have a microscope, but it seems laser engraved or etched in some other way. The purpose is not stated, but it probably prevents the side of the blade from adhering to the fish to some extend. Less stiction! Not just cosmetic. The instructions contain some funny "duh" sentences such as "Not recommend to let children under 18 use it to avoid any horrible emergency" (sic). I guess we have to "card" everyone entering the kitchen now.Overall, a comfortable knife that will probably last a long time and can easily be sharpened if ever needed. Probably not for everyday use, but good to have for special cutting tasks.

4.0 out of 5 stars Okay quality fillet knife

    C.R. · March 11, 2024

This fillet knife is of ok quality, the blade is sharp and it will get the job done. The handle isn't of overly great quality since it's just a standard plastic handle, but you get what you get for the price of just under $4. One thing that is really lacking is a sheath, especially since you are usually taking this kind of knife out fishing with you, so you don't want a sharp knife just floating around in your tackle box. Generally fillet knives come with a sheath, but this one did not. Keep that in mind.
