My buddy told me about this Mexican corn. I have to say it's really good. I make a meal out of a can. I add a little butter, some cayenne pepper and in no time I have a spicy snack.

Mexican Corn Casserole:3 Cans Summer Crisp Mexican Corn, drained1 - 7 oz can green chillies1 - 6 oz can chopped jalapeños1/2 cup chopped green onions1 cup mayonaise1 cup Sour cream1 t. Black pepper1/2 t. Garlic powder16 oz grated sharp cheddar cheese———————2-3 bags of FritosReserve 8 ounces of the grated cheese. Mix the rest of the ingredients together. Let sit in the refrigerator at least two hours. Can eat dip as is with FritosORPreheat oven to 425 degrees.Poor dip into skillet sprayed with cooking spray. Sprinkle the rest of the cheese over the dip. Bake 20 minutes or until bubbly. Eat with Fritos.Can let’s sit in refrigerator 2 or 3 days before you bake it.I’m so glad I found a place to buy the Mexican corn as I can no longer find it in the stores.
