Our second most popular knife, next to our chef knife, the 6-inch KAN Core Santoku is maybe the knife we're most proud of. We worked on the weighting, balance, and handle length with famous chef J. Kenji López-Alt, and used his feedback to come up with what we think is the best santoku in its class. We've scalloped the sides of the blade for improved food release, and with a 15-degree angle on both sides, this knife glides effortlessly through fruits, veggies, meat, and fish.

Most of my dinners are stir fry in an Iron Clad non stick wok. With my old knives it was hardTo get thin slices for my meal. Not anymore definitely worth the cost.
