If you are into sourdough baking, this is the flour that you want to use when proofing your bread. Sprinkle it in the bannetons and on the bread. After proofing in the fridge, plop them out, brush off any excess flour, and add a design on top. Into the oven they go. The rice flour is light enough to let the designs show through perfectly.
