Something as simple as adding flour to a tested recipe can prevent the food in the center of the jar from achieving the proper temperature and time to assure destruction of botulism spores.*****************Likes:I use this canner exclusively with an induction cooktop. My cooktop has sufficient control to keep the canner at the correct temperature/pressure once it has reached proper pressure. Excessive heat once you reach the processing pressure will result in excessive water loss during processing. I also wrap a heavy towel around the canner sides to insulate it during the cooking process. I use binder clips to hold it in place and never cover the top lid, since the jiggler weight and safety pressure release plug must be clear of any obstructions. Since the induction unit produces no heat or flame, there is no danger of fire. In addition, the insulation helps the canner heat more evenly as it's rising to proper temperature and pressure. During processing, the towel reduces the heat lost to the surrounding air during processing.Some reviewers have experienced problems with the canner including failure to seal or warped bases. While I have only used the canner about 7 or 8 times, I experienced none of these problems. It is important to put in the proper amount of water before starting. If the unit boils off all the water during processing, the food batch will be unsafe and ruined, and you can certainly cause the canner base to warp. That is why you must monitor the canner during processing time to make sure that the canner remains at the required pressure throughout the processing time, and to make sure you are not boiling off the water excessively. My induction cooktop has a timer that I set once processing pressure is reached in order to shut down the cooktop at the end of the processing time. This does not relieve you of monitoring the process to assure that pressure never drops below the recipe requirement during the entire process.I never experienced failure of the top to seal with this unit, but I did have that happen with a pressure cooker. I believe this results from uneven heating or heating too fast when coming up to proper pressure. Because of my use of the towel for insulation plus the size and large capacity of this Presto unit, I don't believe that will be a problem. My induction cooktop is only 1,500 watts, which limits the amount of heat during initial heating. If you ever experience seal failure and a dirty seal or debris is not the cause, try using lower power while bringing the unit up to processing pressure.Overall, this unit does what it's supposed to and will allow you (with the proper jiggler weights) to process food from any canning recipe.

I grew up around pressure cookers/canners and love what they can do. My parents used both Mirro and Presto. I bought a Presto 12-qt cooker/canner probably 20 years ago and still use it to this day,I bought this 23-qt canner after my Mom passed away in 2023 so I could start canning produce from my Dad’s garden. Sadly, his advancing age makes it challenging for him to do his own canning on his own. I’ve not just stayed with produce - I’m now canning veggies, soups, meats, fruits…it is SOOOOO much better than store-bought stuff that contains chemicals I can’t pronounce. I don’t want to buy processed cans of chicken or roast beef again. I started canning hamburger so if I want to make sloppy joe sandwiches or spaghetti, I can open a jar of hamburger and have dinner ready in minutes. It is SOOO much more convenient than waiting for a frozen pound of burger to thaw/cook.In fact, I’ve canned 31 pints of hamburger over the past two days and will start canning about 35-40 pounds of chicken tomorrow. Stew meat is next on my list then I need to replenish my quart jars of my taco soup and my husband’s chili. My Dad asked me to make him some me homemade blackberry jam, so my canners and I are going to be busy for a while.If you get a good quality pressure canner (and I think Presto has quality products) and treat it with respect, it should last many, many years. Replace the seals and other items the manufacturer suggests on their time frame. Trust me, it’s a small price to pay for safety and efficiency with home canning.Happy canning!

I paired this cooker with a Duxtop P961-LS countertop induction burner and got fantastic results.With 2-1/2" of water in the cooker the button popped at 32min running full blast. Up to 15psi at 40min with the included jiggler part #28-700. I read another review that said the included jiggler was 5psi, this was not the case for me.The Duxtop burner maintained 15psi at power level 5.0 out of 10.

I replaced an old pressure cooker. I’m so glad I did! I had no idea how much better this one would be.It’s quite large at about 15in across, in fact you’ll want to make sure you have a kitchen burner large enough to support this thing.The pressure went to 15 psi quite quick on the induction burner I use.Be aware, the product manual specifically states it cannot be used with a propane “ turkey cooker”.It’s easy to clean including the seal. A simple elegant design, no frills but I think it will last me decades. A bit more expensive than I was hoping but after using it I think it’s a good value.

This was a gift for my daughter. She is very much into growing her own food and canning. I cannot tell you how excited she was to get it and uses it all the time. Thank you so much for a wonderful product! It works exactly like it’s supposed to, and I was very surprised at how big it was, of course I’m not the canner, that’s my daughter and she loves it!

Works as stated. Metal became tarnished after one use for canning. I have other Presto pressure cookers that are not used for canning and this never happened.

The canner is awesome! Works great with my induction stove but…,, it came with NO tools! I have bought several canners in my life and they all came with a funnel and tongs. I got bone broth in jars and ready for canning. Opened the new canner and surprise- no tools!! 8:5 at night I racing through the night trying to find one! Three stores later, got it!! 10:02 back home finishing canning!** I admit, I should have checked what was inside the box
