For baking purposes, most 100% chocolates are ok, and hard to differentiate in the final product. However, I like to eat it plain, and then subtle (and not so subtle) differences are much more noticeable. I think I've tried every 100% chocolate in the market, and I put Guittard and Ghirardelli at the top (some days I prefer one, and other days the other way around).Btw, if you are used to the (for me too sweet) bittersweet chocolates, all 100% chocolates will taste horrible ;-)And like with wines, chocolates are being marketed through packaging, fancy stories, and ridiculous prices, none of which correlate well with the quality of the chocolate - and that's before I get into the "single cru" concoctions...
