These noodles were a great addition to homemade chicken noodle soup. Cooked quickly with a tasty al dente texture. Was a bit of a splurge, but definitely worth it.

Just had these tonite in a crawfish, shrimp, mushroom cream sauce w/white pepper, cayenne, and Hungarian paprika. It was fantastic.The cream was about 2/3 heavy cream with 1/3 Lactaid milk. The noodles soaked it right up and became thick, tasty sauce-suckers but didn't feel soggy themselves. So easy to stab a noodle then a tail or shrimp. Despite putting on quite a bit of sauce, there was almost not enough to dip the crusty garlic bread in.When you get a noodle that can absorb a thick sauce w/o becoming mushy or soggy, it's a keeper. The Compagnia Italian Egg Pappardelle Pasta is ok but nothing special. Flavorless pasta. I will be using De Cecco next.

I love this pasta and can not buy it in the small town we live in. This arrived broken into small pieces and I am not sure that I will even cook it.

Some dishes just need egg noodles, for me it's things like beef stroganoff and Bolognese ragu and I have to say these noodles are outstanding. Great texture, good flavor, definitely better than anything I can buy locally. Shipping is fast, there's a lot of bubble wrap surrounding each package and the pasta is in nests so I've always had some broken pieces but the vast majority fully intact despite all the jostling during shipping. Not the cheapest, but definitely my go-to pasta of choice.
