Having been gluten free for five years, I sometimes forget how delicious a muffin can be. I used buttered salt instead of the oil, and made a mega-muffin using a pie tin. Walnuts sprinkled on top. Cooked until brown. I sliced the mega-muffin into six wedges, and ate one. Over the next half hour, I ate the other five wedges.A week later I did it again.I'm in trouble!

These are so moist and so good. I always add a little cinnamon to the mix and sometimes make with olive oil or melted butter depending on how gluttonous I’m feeling that day. Either way though they turn out amazing and never last more than a few days in my house. I usually make in a loaf pan and eat warm with a little homemade whipped butter (butter + heavy whipping cream). Mmm! Like most lower carb grocery items, and frankly all groceries at this point, each box is kinda pricey. I just paid around $21 for a 3 box pack. But when I’m craving something sweet, it definitely scratches that itch and is worth it.

My nutritionist put me onto Simple Mills products, and so I occasionally indulge in them. The banana muffins are probably my favorite. The taste is good, but admittedly not quite as good as the "real thing". Using almond flour gives you a lower glycemic product which affect blood sugar less than "regular" flour, which is why I eat these on occasion. The muffins are fairly moist and have a good flavor, and are really really simple and quick to make. Just pour the ingredients in the box into a bowl, add a couple of things, stir and pour into muffin tins, bake, and you're done. Less than 10 min of your time and you have a batch of healthier but good tasting fresh muffins.

This became our favorite desert! My kids are willing to sell us on the slave market for it! Every time we ask what should we bake as a treat they unequivocally say: "THE banana bread!"We do not bake this as muffins - we use a loaf pan and make it a banana bread instead. It is more moist, and the edges are melt-in-your-mouth goodness! Oh, we found that baking it this way it needs a bit more time in the oven.As we removed flour from our house completely, this became a favorite! It is a bit expensive, and with other Paleo mixes we tried to make our own. Not this one! We do not want to mess with this perfection! It is much better than any other regular banana breads we made or bought prior to being Paleo. I know it sounds over the top, but it's not. It is that good! Even if I quit our Paleo lifestyle (not probable at all) I would still get this mix.This is expensive though. The banana bread that comes out of one bag is small. But hey, good things come in small packages, don't they?
