This irresistible antipasto is made for us in Tuscany, in the traditional way. Most food producers use artichokes which have been stored in brine, but these are preserved fresh at harvest time in extra virgin olive oil, so they have real flavor and texture.

These are really great marinated artichokes, I don't think I've ever had any as good at these.But they are seriously expensive, and once you open the bottle, you really need to finish it off. They give you two choices on the bottle's instructions; ensure what remains is covered by oil, or refrigerate. If you cover it with oil, you will necessarily dilute the seasoning when the next ones come out, and they won't taste is good. If you refrigerate, at least half the flavor will be gone, especially the more subtle nuances which make this such a great choice. Worse, the cold will change the texture, hardening parts of it and making it more like a common artichoke. So open it with friends, enjoy them, finish it off. This doesn't 'keep' well.Because it doesn't keep well, and because of the ridiculously high price, I had to take away a star.

A suggestion, when finished use the oil and herbs left too cook with! Refrigerate or Freeze you'll get an added bonus. The price is high but oh so good!

The jar was covered in an oily layer and looks like it leaked. It’s not any good to me and I can’t return it!! Not happy!!!!
