This powder works well in breads and ice creams. I bought this product after making a few batches of brown butter for fish at home without any milk powder. While you can simply brown butter on the stove by cooking it until it toasts, using this powder in the butter adds more solids - which add flavor. So if an entire stick of butter only has a few milligrams of milk solids to toast, while the rest is oil or ghee, you can add more solids that will toast and add more concentrated flavor. It works great! We also add this to homemade cookie batter to keep them soft and chewy. I never added water to this to make milk so I do not know how well it dissolves, but I am going to buy another bigger bag next time because we use it so much.

We enjoy Judee’s Whole Milk Powder in our homemade cocoa mix. It adds a smooth, silky mouthfeel without compromising the cocoa taste. The powder is also a key ingredient in a bread recipe we make. It would have been so much more convenient if our Judee’s Powder had arrived with the order just received, minus Powder and our Thai deodorant. We were really counting on it.

Tried two other whole milk powders. One tasted very rancid from age, the second slightly. Judees mixed easier, I only used a whisk rather than a blender. The expiration date was 2 years out from the others. The milk cleaned off the glass decanter more easily than the other two. Bought again.
