Its taste is a little different than the sesame seeds I used to eat when I was younger. These seeds have this light bitter taste which might be specific to this variety. I am not sure if this is the case but at least they are fresh.

09/02/2015:Well I finally got around to opening these seeds. They are fresh and tasty. I keep them in my big freezer at my shop and just bring some home when I need them.Tonight, Ima gonna start a batch of hummus. The sesame seeds will be the flavor enhancer for this. (love homemade hummus)I also brought enough to use on some barbecue chicken for the weekend.Not much more to say but if they don't play nice when toasted, I'll come back and update this review.9/4/15:Well I toasted a bowl (of the seeds!). I didn't read the product page well enough and wasn't expecting unhulled seeds. These make a much less smooth hummus and have a slightly bitter aftertaste. I love the bucket, I love these cooked into rice and they were great in a fruit/nut bar, but I really wanted hulled seeds and had to find another seller. I really wish there was an hulled choce from this seller. I've been tossing a few handfuls of these in the gravel driveway with some millet, and the birds and squirrels are really enjoying them.
