The 2 pound size is great but too tall for a sandwich, the 1 pound is great as well but doesn’t yield enough slices, so 1 1/2 pound loaf is perfect for us. It yields 16 slices. I use fleishmanns traditional active dry yeast in the 113gram bottle (purchased on Bolo). It works better than those little packets, no I don’t know why it just does. I also use Kate Naturals vital wheat gluten as well.The texture and density of the bread is so nice I’m so pleased I bought this machine.The machine is not very noisy, cleans up in minutes and pretty easy to follow instructions on how to use it.When I make the bread I add 2 ounces of everything seasoning to the flour before I put it in the machine and it gives the bread a nice little flavor. This week, pizza dough! Who needs store bought bread!!! Buy it and enjoy!

    This is the first time I have ever used a bread machine, so I can’t compare it with other machines. All I know is that it makes perfect bread with little effort required. Even sourdough bread turned out great, if you don’t mind an oddly shaped loaf. With the exception of a few typos, the instructions, and recipes are well written

    Love, love, love it! Very quiet and stable on kitchen counter. I made two beautiful loaves right out of the box! Whole Wheat and Pizza Bread. I have tried Zorushi, Cuisinart, Hamilton Beach, KBS, and none of them appealed to me like the Breville Bread Machine. Now my experience. . . in baking 1.5 loaves, I stop the machine at Rise 3, take off the paddle (while I am there) and gently resituate and shape the dough (use Pam on hands) to rise in the center of the pan. The pan accommodates up to a 2.5 lb loaf of bread, so dough gets tossed around to side during kneading process. I like the very efficient 1 paddle Breville. . . it has the power to knead the dough at over 800 watts. Breville is quality. . . whatever you buy. In beginning, you've got to layer the ingredients. . . wet on bottom, dry on top, and be careful with temp of liquids. . . If you have a problem, it could be you, the recipe, or other factors (such as the yeast you have chosen to use) that can affect the outcome of your baked product. Don't blame the well-made machine. The book that accompanies it is very informative (small type) with a few recipes. So I used ones that I already had and one off the internet. Wow! I am in love with this machine and can't wait to see what all is in store for me and my family using it!

    I'm writing this review from the perspective of one who has never before owned a breadmaker, but as all else, does extensive research before purchasing any appliance.I was looking for the best bread maker on the market that would satisfy my small family's needs. I needed something that required no attention to operate (wife) and could make sweet breads like banana wallnut (son), yet was not limited to size and types of breads that it could make (self). With this in mind I narrowed it down to three bread makers - the Breville BBM800XL, the Zojirushi BB-PAC20, and the new Panasonic SD-YR2500.All three of these machines are amazing bread makers worth anyone's consideration. The following is why I chose the Breville and why I am keeping it.Sizes:Of the three machines I've mentioned, the Breville is the only one that gives the user an option to make 4 sizes of bread loafs. The sizes are 1, 1.5, 2, and 2.5 pound loafs. In practice I've found that for my small family the 1 pound loaf is the perfect size for us. Two pounds is just entirely too much bread for us to manage, half of it ends up going to waste as stale bread because we simply can't eat that much no matter how good it is. The Zojirushi has a limitation of only making 1.5 or 2 pound loafs. The Panasonic had more size options, but does not as small as 1 pound.Dispensers:My wife wanted a machine she could "set and forget" (an old Ron Popeil reference). In other words she did not want a machine that she would need to tend over to add things like nuts or raisins when a little beep prompted her to. In this case too the Zojirushi does not fit the bill as it is the only one of the three that does not have an automatic dispenser of any sort. The Breville has a fruit and nut dispenser, but the Panasonic SD-YR2500 has both a fruit and nut dispenser as well as an automatic yeast dispenser. Because of this the Panasonic is as "set and forget" as you can get with an automatic bread maker.Baking options:Where the Panasonic really fails is its limitations with baking options. Of the three machines mentioned, the Panasonic is the only machine that does not include a "Whole Wheat" selection, as well as being the only machine that lacks customization options. This lack of customization coupled with limited options (for example there is no jam option either) renders the Panasonic the least useful of the high end bread makers.Conversely this is where the Breville shines. The Breville sports the best user interface of the three. The selection wheel is very intuitive and easy to use, plus the baking options are well described on the large LCD display. Each baking option is listed in plain English (as opposed to a numerical code you have to look up as with the other two) as well as plainly obvious icons for loaf size and crust darkness. The Breville also allows for full customization of any of the preset baking options in addition to the ability to program up to nine custom baking options.So that's why I chose the Breville, now to what I have learned with experience......Collapsible paddle:Lots of reviews mention this one part as something to love or loathe. I, like on most subjects, fall somewhere in the middle. The collapsible paddle requires more attention than I would like, but it is not terribly difficult to manage. The first thing you want to do after removing the baked bread from the bread pan and allowing the pan to cool, is to fill the bread pan with hot water up to just past the collapsible paddle and allow it to soak for a while. This will soften any dough that is stuck within the hub and arm of the paddle and allow for easier extraction and cleaning. To clean the paddle I've found that running it under hot water while cleaning it with a soapy dishcloth does the trick. The bread pan itself is a snap to clean. Just be careful not to scratch the Teflon lining of the pan while cleaning it out (take off any jewelry).Delay timer:I'm good at math, but I don't want to do it when using an appliance that has the capacity of handling it for me. The only thing that I envy about the Zojirushi is the ability to simply set the hour and minute you want your bread to be done rather than calculating the start delay. It's not as bad as I make it sound. All you have to do is push the "delayed start" button then set how many hours/minutes it is before the time you want your bread to be done. For example, if it is 7:30pm now, and you want your bread to be done at 7:00am, then set 11 hours and 30 minutes (11:30) at the "ready in" prompt. Still, the Zojirushi timer is better, set what time you want it done and forget about it (unless of course you want to add raisins or something).Noise:Not loud, not a problem at all.Walking:My machine is sitting atop a clean granite counter top. The weight of the machine on its rubber feet keep the machine stuck fast - the thing wont move even when I want to move it. Not sure why some others have indicated that this is a problem.In conclusion I am very happy with this purchase. This machine above all others gives me all the baking options I need for my small family and turns out absolutely spectacular bread.

    One Star - Avoid This Disappointing Bread Maker!The Breville BBM800XL, despite its fancy features, utterly fails at its primary function: making decent bread. The mixing is atrocious! It leaves pockets of unmixed flour, resulting in a horribly inconsistent dough. You'd think with a "Custom Loaf" machine, it would handle this basic task, but no.And the results? Hideously deformed loaves! They come out misshapen and lopsided, looking nothing like the picture on the box. Even when I select the "Light Crust" setting, the bottom of every single loaf ends up burnt to a crisp while the rest remains pale and unevenly baked. What's the point of custom settings when the outcome is consistently ruined?This expensive machine is nothing but a source of frustration. Burnt bottoms, deformed loaves, and poorly mixed dough – it's a trifecta of baking failure. Save your money and buy a simpler, more reliable bread maker. This Breville is a complete letdown.

I bake about 2-3 times aweek and no failures so far however be warned thr 4-5 cup flour recipes are huge, definately family size, even with whole wheat flour. I never use the vital gluten as our Canadian wheat is great and gives good rise always. The only door stop loaf so far was the recipe in the book containing cinnamon which kills yeast apparently. I mixed it in the flour with all the other dry ingredients, guess that was not a good idea! I always add yeast last on top of dry ingredients and warm water and butter first.The top of every loaf is always nicely browned on every setting however the sides and botton are a little too brown even on light setting basic recipe for white bread, perhaps due to too much sugar or whole milk powder? The whole wheat setting for crust is auto preset and bottom and sides crust are very dark but still wonderful high loaf bread and this too was a high sugar bread.The winner in the preset loaf where crust cannot be adjusted is the french bread crusty loaf.......a beautiful light airy bread, taste excellent and perfect golden crust all around but it had no sugar or milk powder, just oil and salt any maybe that is why, so still have more fun experiments to try it seems.The pan is surpprisingly light, with very slick coating. Single paddle and pan shape and kneading very thorough, I am impressed and loaf shape is quite high semi rectangular deep enough so no stick to lid issues.Anyway the machine works great, the paddle only lays partly prone due to dough caught under the paddle , makes a dent in bottom of loaf but that is still better than the machines that tear a huge hole when paddle is left in to bake. However there is a beep after last knead so you can remove paddle if desired.The add in dispenser works fine and goodies get mixed in properly.The dough is extremely well mixed and finished loaf shap is smooth unless the dough is too dry then thhe top may be lumpy.I am really delighted to have a completely hands free bread making machine and enjoy it very much. I did a lot of research before buying and am pleased with my choice of Breville.I have 2 other Breville products and found them very good, heavy duty also just like this bread machine.

    J'ai chercher longtemps et hésité longtemps parce que elle est quand même plutôt cher, mais je ne regrette absolument rien elle est simple à utiliser,nettoyer et les recettes suggérés sont aussi excellentes. Sa fait 3 + ans que j'ai cette MAP et elle me donne toujours les même résultats. La machine est assez imposante mais légère et très stableJe l'adore

    So far, we are really happy about this Breville bread making machine. This is the first bread maker we own and so far we're having a great experience with this appliance.All bread makers make some noise, and this one does too, as mentioned in some of the previous reviews, but it is bearable to be in the same room while it does the kneading. The main issue we have with noise is that at some point in the cycle, the machine will vibrate, probably to dislodge the nuts in the nut dispenser. This makes A LOT of noise, enough to wake us up. Sadly, this function cannot be turned off, even when the nut dispenser is not used. Only the beeping can be turned off.This being said, the nut dispenser is a really cool feature. The machine wobbles quite a bit when kneading, we found that putting it on the floor helped reduce the noise and make the kneading more efficient.The collapsible paddle, which seem to cause trouble to some users (see previous reviews), does indeed occasionally fail to collapse, but still does most of the time. When it does not, it does not "take a big chunk" out of the bread, but only a small one. It is always possible to retrieve the paddle without tearing the whole bread apart. For us, this is not an issue. This paddle is really small anyway, but the kneading is so effective.The breads we made were good. Now we really eat more bread than before (maybe too much?). We tried all recipes without the milk powder and the results were fine. Probably not a necessary ingredient. We have also tried the pizza dough, to great success. We really like the "delay" feature, too. It is just amazing to wake up and have this freshly baked bread smell in the apartment and a very fresh loaf to start the day.Some tips if you want to add flaxseed to your bread, do not put them in the nuts dispenser but rather add them at the start, with the other dry ingredients. Also, always make sure you add whatever you want to put in the nuts dispenser AFTER you've put the bread pan in the machine, as some nuts can fall through the slits.One more thing for francophones who might be using the North American version of the users manual: there are errors in the French part of the booklet. Some columns have not been translated and there even are mistakes in the quantities used in the recipes. So stick to the quantities mentioned in the English version…Finally, one unfortunate design flaw: no OFF switch. When plugged in, the machine is always on, drawing electricity for nothing. Thankfully, the plug is sturdy and will not mind the machine being plugged in and out constantly, but this is inconvenient.

    I use this bread maker twice a week at least to make whole wheat bread and it yields perfect results every time. I love the preheat feature which allows for a lovely rise and enjoy the lay flat paddle. I will say the paddle does not always work and sometimes stays up but this is not a big issue for me as it's quit skinny so it affects very little of the bread in general. I bought this to replace my broken Cuisinart bread maker and I couldn't be more pleased. The only concern I have involves the cleaning of the pan. There are 6 plastic circles at the bottom of the pan which get bread stuck around them. Cleaning that area is annoying and time consuming. Not annoying enough for me to take a star off but something you should be aware of.Separate from bread this also makes excellent dough and I am a rock star at home right now because I can make cinnamon buns regularly with little effort on my part. This machine is far superior to the Cuisinart in my opinion. The texture and quality of the bread is much better. Our 100% whole wheat loaves are light and fluffy and my family has been eating it without complaint. A great way to keep everyone healthy and save money in the long run as it's far cheaper to buy ingredients and bake it ourselves. If you're looking for a new machine this one is solid and shouldn't let you down.

    First impressive then very dissappointing

    The bread maker looks beautifully and is a real gem in the kitchen. The large screen and the dial are great to navigate through different options and I love the lightbulb which lets you check your bread without opening the lid.Unfortunately, there are a few things that make the bread maker very unattractive and unpractical. First of all, I bought this machine to bake sourdough bread. After I read in the answers that the machine can make sourdough bread I was very happy. There is no sourdough program though, however I hoped I can program it accordingly using a custom program. Unfortunately this doesn't work as the machine restricts the maximum rise times between the punch downs to 1:40hrs! Whyyy? What is the point of doing this? This way you can't easily make sourdough bread which rises much longer than 1:40hrs! Of course you could use a knead program and a bake program but then its not fully automated, i.e., you can't set up your sourdough bread in the morning and have it done for dinner after work. That was the whole point why I bought this machine.Since I use my own programs I also tried to program my own bake program. Unfortunately, the maximum temperature is restricted to 300F! Whyyyyyy? I have never heard of a bread that is baked at 300F and most other bread bakers use 350F as baking temperature for a reason. A maximum (!) baking temperature to 300F doesn't let you bake good breads. Of course you get some kind of bread out of this machine if you just bake it longer, it's just not the best in terms of flavor and texture. For me those two restrictions are absolutely unecessary and render this bread maker useless for my purposes. The rise time limit is from my perspective a very unfortunate Software limitation that makes no sense at all. What is the purpose of this restriction? The temperature restriction of 300F might be hardware, I just don't understand why you would design a bread maker that can't reach the most typical temperature for bread baking, i.e., 350F. Ideally you would think a versatile bread maker would be designed such that the 350F + X is covered, i.e. 400F max would be reasonable. This way the costumer would be able to select a reasonable temperature for a variety of breads. I also don't like the recipe book a lot as it uses not very precise units of cups and spoons. A number in grams would be highly appreciated as I would argue that many people measure the ingredients by weight (having the bread pan on a weightscale). All this however doesn't matter as the temperature restriction renders the bread maker unusable for my purposes.I started a return after baking two very dissappointing breads. It's sad how such a great hardware gets totally messed up by the firmware/software on it. It really had potential but I can't recommend this machine to anybody who loves bread. Please read your bread recipes and you will see that most of them required 350F (around 180C), this machine simply can't do this :(Update: since all my breads from this machine seemed very crunchy, I started doubting the temperature settings of this bread maker. I thus measured it with an oven thermometer (see attached picture). The measured temperature for the 300F setting was indeed 380C which is good and bad. It's bad because obviously the temperature settings of this bread maker can't obviously be trusted (max temp according to manual is 300F) but at least it seems to reach a reasonable temperature which is good. Again it's frustrating how a nice piece of hardware like this suffers from messed up software. Did this breville company not check this before they threw that bread maker on the market? A correction factor could have easily been introduced into software. Instead they deliver this machine with instructions to bake bread at 284F which in reality is closer to 350F when I measured it. Anybody who baked bread before will get totally confused and ultimately has to convert temperature from F or C into some magically breville temperature unit order to bake a reasonable bread. At least it works for me now, still not acceptable at this price point...

The 2 pound size is great but too tall for a sandwich, the 1 pound is great as well but doesn’t yield enough slices, so 1 1/2 pound loaf is perfect for us. It yields 16 slices. I use fleishmanns traditional active dry yeast in the 113gram bottle (purchased on Bolo). It works better than those little packets, no I don’t know why it just does. I also use Kate Naturals vital wheat gluten as well.The texture and density of the bread is so nice I’m so pleased I bought this machine.The machine is not very noisy, cleans up in minutes and pretty easy to follow instructions on how to use it.When I make the bread I add 2 ounces of everything seasoning to the flour before I put it in the machine and it gives the bread a nice little flavor. This week, pizza dough! Who needs store bought bread!!! Buy it and enjoy!

    This is the first time I have ever used a bread machine, so I can’t compare it with other machines. All I know is that it makes perfect bread with little effort required. Even sourdough bread turned out great, if you don’t mind an oddly shaped loaf. With the exception of a few typos, the instructions, and recipes are well written

    Love, love, love it! Very quiet and stable on kitchen counter. I made two beautiful loaves right out of the box! Whole Wheat and Pizza Bread. I have tried Zorushi, Cuisinart, Hamilton Beach, KBS, and none of them appealed to me like the Breville Bread Machine. Now my experience. . . in baking 1.5 loaves, I stop the machine at Rise 3, take off the paddle (while I am there) and gently resituate and shape the dough (use Pam on hands) to rise in the center of the pan. The pan accommodates up to a 2.5 lb loaf of bread, so dough gets tossed around to side during kneading process. I like the very efficient 1 paddle Breville. . . it has the power to knead the dough at over 800 watts. Breville is quality. . . whatever you buy. In beginning, you've got to layer the ingredients. . . wet on bottom, dry on top, and be careful with temp of liquids. . . If you have a problem, it could be you, the recipe, or other factors (such as the yeast you have chosen to use) that can affect the outcome of your baked product. Don't blame the well-made machine. The book that accompanies it is very informative (small type) with a few recipes. So I used ones that I already had and one off the internet. Wow! I am in love with this machine and can't wait to see what all is in store for me and my family using it!

    I'm writing this review from the perspective of one who has never before owned a breadmaker, but as all else, does extensive research before purchasing any appliance.I was looking for the best bread maker on the market that would satisfy my small family's needs. I needed something that required no attention to operate (wife) and could make sweet breads like banana wallnut (son), yet was not limited to size and types of breads that it could make (self). With this in mind I narrowed it down to three bread makers - the Breville BBM800XL, the Zojirushi BB-PAC20, and the new Panasonic SD-YR2500.All three of these machines are amazing bread makers worth anyone's consideration. The following is why I chose the Breville and why I am keeping it.Sizes:Of the three machines I've mentioned, the Breville is the only one that gives the user an option to make 4 sizes of bread loafs. The sizes are 1, 1.5, 2, and 2.5 pound loafs. In practice I've found that for my small family the 1 pound loaf is the perfect size for us. Two pounds is just entirely too much bread for us to manage, half of it ends up going to waste as stale bread because we simply can't eat that much no matter how good it is. The Zojirushi has a limitation of only making 1.5 or 2 pound loafs. The Panasonic had more size options, but does not as small as 1 pound.Dispensers:My wife wanted a machine she could "set and forget" (an old Ron Popeil reference). In other words she did not want a machine that she would need to tend over to add things like nuts or raisins when a little beep prompted her to. In this case too the Zojirushi does not fit the bill as it is the only one of the three that does not have an automatic dispenser of any sort. The Breville has a fruit and nut dispenser, but the Panasonic SD-YR2500 has both a fruit and nut dispenser as well as an automatic yeast dispenser. Because of this the Panasonic is as "set and forget" as you can get with an automatic bread maker.Baking options:Where the Panasonic really fails is its limitations with baking options. Of the three machines mentioned, the Panasonic is the only machine that does not include a "Whole Wheat" selection, as well as being the only machine that lacks customization options. This lack of customization coupled with limited options (for example there is no jam option either) renders the Panasonic the least useful of the high end bread makers.Conversely this is where the Breville shines. The Breville sports the best user interface of the three. The selection wheel is very intuitive and easy to use, plus the baking options are well described on the large LCD display. Each baking option is listed in plain English (as opposed to a numerical code you have to look up as with the other two) as well as plainly obvious icons for loaf size and crust darkness. The Breville also allows for full customization of any of the preset baking options in addition to the ability to program up to nine custom baking options.So that's why I chose the Breville, now to what I have learned with experience......Collapsible paddle:Lots of reviews mention this one part as something to love or loathe. I, like on most subjects, fall somewhere in the middle. The collapsible paddle requires more attention than I would like, but it is not terribly difficult to manage. The first thing you want to do after removing the baked bread from the bread pan and allowing the pan to cool, is to fill the bread pan with hot water up to just past the collapsible paddle and allow it to soak for a while. This will soften any dough that is stuck within the hub and arm of the paddle and allow for easier extraction and cleaning. To clean the paddle I've found that running it under hot water while cleaning it with a soapy dishcloth does the trick. The bread pan itself is a snap to clean. Just be careful not to scratch the Teflon lining of the pan while cleaning it out (take off any jewelry).Delay timer:I'm good at math, but I don't want to do it when using an appliance that has the capacity of handling it for me. The only thing that I envy about the Zojirushi is the ability to simply set the hour and minute you want your bread to be done rather than calculating the start delay. It's not as bad as I make it sound. All you have to do is push the "delayed start" button then set how many hours/minutes it is before the time you want your bread to be done. For example, if it is 7:30pm now, and you want your bread to be done at 7:00am, then set 11 hours and 30 minutes (11:30) at the "ready in" prompt. Still, the Zojirushi timer is better, set what time you want it done and forget about it (unless of course you want to add raisins or something).Noise:Not loud, not a problem at all.Walking:My machine is sitting atop a clean granite counter top. The weight of the machine on its rubber feet keep the machine stuck fast - the thing wont move even when I want to move it. Not sure why some others have indicated that this is a problem.In conclusion I am very happy with this purchase. This machine above all others gives me all the baking options I need for my small family and turns out absolutely spectacular bread.

    One Star - Avoid This Disappointing Bread Maker!The Breville BBM800XL, despite its fancy features, utterly fails at its primary function: making decent bread. The mixing is atrocious! It leaves pockets of unmixed flour, resulting in a horribly inconsistent dough. You'd think with a "Custom Loaf" machine, it would handle this basic task, but no.And the results? Hideously deformed loaves! They come out misshapen and lopsided, looking nothing like the picture on the box. Even when I select the "Light Crust" setting, the bottom of every single loaf ends up burnt to a crisp while the rest remains pale and unevenly baked. What's the point of custom settings when the outcome is consistently ruined?This expensive machine is nothing but a source of frustration. Burnt bottoms, deformed loaves, and poorly mixed dough – it's a trifecta of baking failure. Save your money and buy a simpler, more reliable bread maker. This Breville is a complete letdown.

I bake about 2-3 times aweek and no failures so far however be warned thr 4-5 cup flour recipes are huge, definately family size, even with whole wheat flour. I never use the vital gluten as our Canadian wheat is great and gives good rise always. The only door stop loaf so far was the recipe in the book containing cinnamon which kills yeast apparently. I mixed it in the flour with all the other dry ingredients, guess that was not a good idea! I always add yeast last on top of dry ingredients and warm water and butter first.The top of every loaf is always nicely browned on every setting however the sides and botton are a little too brown even on light setting basic recipe for white bread, perhaps due to too much sugar or whole milk powder? The whole wheat setting for crust is auto preset and bottom and sides crust are very dark but still wonderful high loaf bread and this too was a high sugar bread.The winner in the preset loaf where crust cannot be adjusted is the french bread crusty loaf.......a beautiful light airy bread, taste excellent and perfect golden crust all around but it had no sugar or milk powder, just oil and salt any maybe that is why, so still have more fun experiments to try it seems.The pan is surpprisingly light, with very slick coating. Single paddle and pan shape and kneading very thorough, I am impressed and loaf shape is quite high semi rectangular deep enough so no stick to lid issues.Anyway the machine works great, the paddle only lays partly prone due to dough caught under the paddle , makes a dent in bottom of loaf but that is still better than the machines that tear a huge hole when paddle is left in to bake. However there is a beep after last knead so you can remove paddle if desired.The add in dispenser works fine and goodies get mixed in properly.The dough is extremely well mixed and finished loaf shap is smooth unless the dough is too dry then thhe top may be lumpy.I am really delighted to have a completely hands free bread making machine and enjoy it very much. I did a lot of research before buying and am pleased with my choice of Breville.I have 2 other Breville products and found them very good, heavy duty also just like this bread machine.

    J'ai chercher longtemps et hésité longtemps parce que elle est quand même plutôt cher, mais je ne regrette absolument rien elle est simple à utiliser,nettoyer et les recettes suggérés sont aussi excellentes. Sa fait 3 + ans que j'ai cette MAP et elle me donne toujours les même résultats. La machine est assez imposante mais légère et très stableJe l'adore

    So far, we are really happy about this Breville bread making machine. This is the first bread maker we own and so far we're having a great experience with this appliance.All bread makers make some noise, and this one does too, as mentioned in some of the previous reviews, but it is bearable to be in the same room while it does the kneading. The main issue we have with noise is that at some point in the cycle, the machine will vibrate, probably to dislodge the nuts in the nut dispenser. This makes A LOT of noise, enough to wake us up. Sadly, this function cannot be turned off, even when the nut dispenser is not used. Only the beeping can be turned off.This being said, the nut dispenser is a really cool feature. The machine wobbles quite a bit when kneading, we found that putting it on the floor helped reduce the noise and make the kneading more efficient.The collapsible paddle, which seem to cause trouble to some users (see previous reviews), does indeed occasionally fail to collapse, but still does most of the time. When it does not, it does not "take a big chunk" out of the bread, but only a small one. It is always possible to retrieve the paddle without tearing the whole bread apart. For us, this is not an issue. This paddle is really small anyway, but the kneading is so effective.The breads we made were good. Now we really eat more bread than before (maybe too much?). We tried all recipes without the milk powder and the results were fine. Probably not a necessary ingredient. We have also tried the pizza dough, to great success. We really like the "delay" feature, too. It is just amazing to wake up and have this freshly baked bread smell in the apartment and a very fresh loaf to start the day.Some tips if you want to add flaxseed to your bread, do not put them in the nuts dispenser but rather add them at the start, with the other dry ingredients. Also, always make sure you add whatever you want to put in the nuts dispenser AFTER you've put the bread pan in the machine, as some nuts can fall through the slits.One more thing for francophones who might be using the North American version of the users manual: there are errors in the French part of the booklet. Some columns have not been translated and there even are mistakes in the quantities used in the recipes. So stick to the quantities mentioned in the English version…Finally, one unfortunate design flaw: no OFF switch. When plugged in, the machine is always on, drawing electricity for nothing. Thankfully, the plug is sturdy and will not mind the machine being plugged in and out constantly, but this is inconvenient.

    I use this bread maker twice a week at least to make whole wheat bread and it yields perfect results every time. I love the preheat feature which allows for a lovely rise and enjoy the lay flat paddle. I will say the paddle does not always work and sometimes stays up but this is not a big issue for me as it's quit skinny so it affects very little of the bread in general. I bought this to replace my broken Cuisinart bread maker and I couldn't be more pleased. The only concern I have involves the cleaning of the pan. There are 6 plastic circles at the bottom of the pan which get bread stuck around them. Cleaning that area is annoying and time consuming. Not annoying enough for me to take a star off but something you should be aware of.Separate from bread this also makes excellent dough and I am a rock star at home right now because I can make cinnamon buns regularly with little effort on my part. This machine is far superior to the Cuisinart in my opinion. The texture and quality of the bread is much better. Our 100% whole wheat loaves are light and fluffy and my family has been eating it without complaint. A great way to keep everyone healthy and save money in the long run as it's far cheaper to buy ingredients and bake it ourselves. If you're looking for a new machine this one is solid and shouldn't let you down.

    The bread maker looks beautifully and is a real gem in the kitchen. The large screen and the dial are great to navigate through different options and I love the lightbulb which lets you check your bread without opening the lid.Unfortunately, there are a few things that make the bread maker very unattractive and unpractical. First of all, I bought this machine to bake sourdough bread. After I read in the answers that the machine can make sourdough bread I was very happy. There is no sourdough program though, however I hoped I can program it accordingly using a custom program. Unfortunately this doesn't work as the machine restricts the maximum rise times between the punch downs to 1:40hrs! Whyyy? What is the point of doing this? This way you can't easily make sourdough bread which rises much longer than 1:40hrs! Of course you could use a knead program and a bake program but then its not fully automated, i.e., you can't set up your sourdough bread in the morning and have it done for dinner after work. That was the whole point why I bought this machine.Since I use my own programs I also tried to program my own bake program. Unfortunately, the maximum temperature is restricted to 300F! Whyyyyyy? I have never heard of a bread that is baked at 300F and most other bread bakers use 350F as baking temperature for a reason. A maximum (!) baking temperature to 300F doesn't let you bake good breads. Of course you get some kind of bread out of this machine if you just bake it longer, it's just not the best in terms of flavor and texture. For me those two restrictions are absolutely unecessary and render this bread maker useless for my purposes. The rise time limit is from my perspective a very unfortunate Software limitation that makes no sense at all. What is the purpose of this restriction? The temperature restriction of 300F might be hardware, I just don't understand why you would design a bread maker that can't reach the most typical temperature for bread baking, i.e., 350F. Ideally you would think a versatile bread maker would be designed such that the 350F + X is covered, i.e. 400F max would be reasonable. This way the costumer would be able to select a reasonable temperature for a variety of breads. I also don't like the recipe book a lot as it uses not very precise units of cups and spoons. A number in grams would be highly appreciated as I would argue that many people measure the ingredients by weight (having the bread pan on a weightscale). All this however doesn't matter as the temperature restriction renders the bread maker unusable for my purposes.I started a return after baking two very dissappointing breads. It's sad how such a great hardware gets totally messed up by the firmware/software on it. It really had potential but I can't recommend this machine to anybody who loves bread. Please read your bread recipes and you will see that most of them required 350F (around 180C), this machine simply can't do this :(Update: since all my breads from this machine seemed very crunchy, I started doubting the temperature settings of this bread maker. I thus measured it with an oven thermometer (see attached picture). The measured temperature for the 300F setting was indeed 380C which is good and bad. It's bad because obviously the temperature settings of this bread maker can't obviously be trusted (max temp according to manual is 300F) but at least it seems to reach a reasonable temperature which is good. Again it's frustrating how a nice piece of hardware like this suffers from messed up software. Did this breville company not check this before they threw that bread maker on the market? A correction factor could have easily been introduced into software. Instead they deliver this machine with instructions to bake bread at 284F which in reality is closer to 350F when I measured it. Anybody who baked bread before will get totally confused and ultimately has to convert temperature from F or C into some magically breville temperature unit order to bake a reasonable bread. At least it works for me now, still not acceptable at this price point...
