What makes this mayonnaise better than regular mayonnaise is the density. I mostly only use mayonnaise in tuna fish and this extra heavy mayonnaise makes the finished product taste better. Extra heavy mayonnaise is extra heavy because it has more eggs in it. If you're wondering why tuna sandwiches bought in a deli taste good, it's because they use this extra heavy mayonnaise. Here's one word of caution. You will have to experiment with extra heavy mayonnaise to find out the proper amount to use for your particular purpose because this extra heavy mayonnaise is significantly different than regular mayonnaise. Once you have the proper amount to use figured out, you will like the results.

I used to own a small restaurant and had Sysco Classic heavy duty mayonnaise that we used. It was very good. Since then i started buying this because they use more yolks than regular mayonnaise and you can see a difference it the color as it is more yellow tinged. Most of the dates are about four months out from delivery but will last longer than that. I would recommend using this as it does add richness to whatever dish you’re making.
