The first solo cookbook from Ottolenghi co-founder Sami Tamimi,
Boustany is anhomage to Palestinian food and culture. "Boustany" translates from Arabic as "my garden," which reflects Sami's signature style and approach to food: colorful and simple vegetable- and grain-led dishes. Bold, inspiring and ever-evolving, Boustany picks up where Falastin left off, with flavor-packed vegetable-based dishes, including pantry items, midweek easy meals and special to-be-shared dishes. It’s an approach that’s strongly present in Palestinian cuisine, from building your mooneh, or pantry, by preserving seasonal vegetables and herbs to lining the dinner table with a variety of salads and condiments reflective of a love for fresh and vibrant food.

The photography is stunning, the recipes are absolutely delicious, modern but all with a solid stake in traditional recipes. As a Palestinian vegetarian, it's not only a special treat to have a whole dedicated modern Palestinian cuisine cookbook dedicated with no meat in it whatsoever, but to have it done so beautifully and far beyond what I expected. 10/10. Delicious foods and recipes in the “blue zone” that honor Palestinian heritage but are made with mostly easily accessible ingredients. This book is a work of art but easily adaptable to any cooks with basic cooking skills. Everything is explained well and intertwined with beautiful cultural context and stories.

Following up on Sami Tamimi's book Falastin (which was a lifeline for exploring at home during the pandemic) comes Boustany ("my garden" in Arabic), which focuses on vegetables and Palestine with connections through food.There are legacies of place, people, and memories that the author carefully weaves throughout the pages as he documents foods and histories while sharing recipes from an array of topics, including pantry staples, breakfast and brunch, small plates and spreads, salads, soups, weekday dinners, sharing, and special occasions, bread, and sweets. Boustany is a book that uses changes in the availability and seasonality of the ingredients.Understanding the complex history of Palestinians begins with how the people have sustained themselves through farming and foraging for fresh and local foods. People need a community to survive and thrive, which often entails preserving while persevering. Time and community are the unspoken but necessary ingredients. These recipes also lend themselves to gatherings and spending time with neighbors and loved ones. This cookbook has a range of recipes, from simple to showstopping, all celebrating vegetables as the title indicates. The index lists out typical categories like spreads, breakfast, weekday dinners and sweets. The range includes familiar dishes like falafel, but with fava beans instead of chickpeas that give them a specificity that are detailed by the author in the recipe headnotes. I appreciate that a lot of the spices and ingredients are repeated and used in many recipes, so you know they will get used again if you invest in your pantry. There is a glossary too, in case any are new to the reader. I made the Asparagus, Leek & Hazelnut Galette and appreciated that the crust was made in a food processor for ease, but still turned out well for an impressive dinner main dish. The book includes more than a dozen sweets, but I haven’t tried any yet. The description of this section says that as with many dishes in the Palestinian repertoire, they may include bold flavors that are steeped in layers of history from the region. I hope to be able to make something from the section soon. I would recommend this cookbook to people eating mainly plant-based, who appreciate seasonal vegetable cooking, or are curious about the connection Sammi Tamini has to his homeland, as expressed through his recipes and cooking. Ten Speed Press provided me with a free copy of this book; the opinions are my own.
