My discovery of Turkuaz Kitchen on her YouTube channel was synchronized with my yearning to prepare foods as close to their natural source as possible. Captivated by the beauty of her videos, the rhythm of her traditional preparation methods and the mouth-watering end results, I aspired to cook this way. I bought a Marcatto hand-crank pasta machine in August and started a new journey of farm to table - eggs from the chicken coop straight to hand rolled pasta. Tomatoes, garlic, onions, herbs, straight to a sauce. My garden was in place, I had fallen in love with pasta making, but I needed that next link to knit it all together. I pre-ordered the cookbook and since it’s arrival I have fallen in love with cooking again. The recipes are straight forward, accurate and as delicious as the photos. I’ve made the empanadas, hamburger buns, chicken sandwiches, potato gnocchi with butter sage sauce and the pumpkin scones. All recipes have been truly amazing. Her recipes remove the intimidation of trying something new. Her voice speaks through the instructions like a friend, providing tips to be well prepared and to pace the process (the hamburger bun dough does not need to be cooked the same day!). I highly recommend purchasing this cookbook to foster a new relationship of being in the kitchen; enjoying the process and using simple ingredients to produce amazing foods! I want to provide a little context: I’m an accomplished cook and I own well over 500 cookbooks. I don’t just read them nor place them on the coffee table for decoration, however. I actually cook from my books and put the recipes to the test. Also, I’m fairly scrutinizing of the cookbooks that I put on my shelf and add to my collection. I don’t have an infinite amount of space nor money, so whatever cookbook I choose to buy has to be worthwhile by providing me and family delicious recipes that we enjoy. Otherwise, I won’t buy it or it will be donated or discarded.I have never heard of Betul Tunc nor the Turkuaz Kitchen before yesterday. I came across her book in my library list of upcoming books and since I love to learn about new cuisines, I put it on hold. I actually thought this book was going to teach me about Turkish cooking. I had no idea it was mainly about bread and dough and not specifically about Turkish dishes.I picked up the book from my library yesterday and started to thumb through. Only then that I realized that Ms. Tunc is an Instagram personality with a large following. I read her intro in the front pages of the cookbook and became intrigued by her endearing story and childhood. I found a podcast of hers this morning and listened to it as well. I am convinced that she is a genuine person -- NOT an attention-starved influencer -- where her baking truly is part of her soul. I think many of us know what it’s like to place our faith in infuencers that are the opposite of this: They think they can cook because they had one recipe that went viral so they write an entire cookbook with plenty of enhanced stylized pictures and the recipes are just AWFUL. I will never fall for that ruse again! But I digress. Since I had some leftover buttermilk from Thanksgiving that I needed to use, I chose to make Ms. Tunc’s Buttermilk Dinner Rolls this afternoon to see if recipe(s) were as legit as she sounded.Now, I’ve baked lots of rolls before, some with success and some have failed. I have an added challenge as I live at high altitude in CO. Sometimes standard raised bread recipes work just fine as written but oftentimes some tweaks for altitude have to be made, usually in the form of more moisture added to the recipe. Because of this, baking with WEIGHT MEASUREMENTS really is key to decreasing the uncertainty at this altitude. I am so thankful that Ms. Tunc includes weight measurements in her book.I know enough about baking that there are certain things that must be done to ensure success, but aside from those cardinal rules of baking (ie, water must be at the appropriate temp to bloom the yeast, yeast can’t be expired or dead, eggs shouldn’t be too cold), thankfully Ms. Tunc provides excellent instructions and some visual aids throughout her book. This is very crucial for those that may not be familiar with bread baking but want to try and have success.Oh btw, here is an observation. When I was mixing the dough in my 6qt Kitchenaid Pro mixer through the first part of the knead, the dough was quite stiff and therefore my mixer had to really power through it. I was cautious not to step away from my mixer at this time for fear that it would bounce off the counter from all of the “violent” movement. Just beware! But once the butter was added, the dough smoothed out and my mixer hummed along. Just saying that despite this, trust Ms. Tunc’s instructions. I did.Also, there is a LOT of resting involved in this recipe. It took almost 5 hrs from start to finish (and I took the “shortcut” version instead of the long fridge version since I wanted to eat these ASAP!)But the rest of her instructions nailed it. She said to test with the window pane test after a certain amount of time. I did exactly as she described at it worked. She said that on the counter, the dough should be ready after 1.25hrs. I checked after 75 min of rest and the dough was ready exactly as she said.Also, Ms Tunc says that when rolling the dough, you should form 20-22 balls of dough. If you choose to bake these in a 9x13” pan like she states is an option, then you’ll have to divide it into 20 balls only. And my other advice is don’t try to eyeball it: use a weigh scale and weigh the dough before dividing to calculate a uniform size for each roll, just as she suggests.The rest of Ms. Tunc’s instructions were spot on: She said each dough ball should weigh between 55=59g. Mine were 60g each and I rolled out 20 to fit in a 9x13” pan. She said to bake for 20-25 min and mine took exactly 24.5 min to reach the final temp of 190F (temp of cooked bread; I used an instant read to measure) and were beautifully brown. Ms. Tunc said to brush with butter and herbs. I left a few of mine plain with just butter (in case hubby wants to eat some with PB & J) and the rest I slathered with melted butter mixed with Trader Joe’s Green Goddess seasoning. Guess what? We like the latter ones better. I can only imagine how good these would be if I had fresh herbs like she recommended in the book. But I didn’t have any so I had to improvise.This is a very lengthy review and if you’ve read this far, then I must confess I have nothing left to say other than the rolls were literally PERFECT and my husband proclaimed them to be “ABSOLUTLEY OTHERWORLDLY.” Fluffy, golden brown, and with a slather of butter or just with the melted butter on top, they were incredible. Not dough-y, not dry, not bland. I don’t think we’re going to eat anything else for dinner except this entire pan of rolls. We both plowed through 2 each in less than 2 minutes. And like I mentioned earlier, I chose to make the “quick” version of these rolls that only required a 90 min rise on the counter. Apparently the “long” version with the rise in the fridge is even better! I honestly don’t know how these rolls can be any better. They were pretty damn perfect already.And if all of this isn’t enough, the rest of the book is just a work of art. Her style and the vibe of the pictures is so unique, vintage, and beautiful. Definitely a refreshing change from today’s Instagram pop culture style that is trendy, vain, pretentious, or overdone retro.I wrote this review immediately after running to my laptop to purchase my own copy of this book. The Buttermilk Dinner Roll recipe alone is worth the price. If you are serious about eating good bread, want to make a successful recipe, and you still have doubts about purchasing this book, then I’m truly at a loss for words. Maybe it’s just best that you borrow it from the library, make the dinner roll recipe, and see for yourself.Meanwhile, I'll be in my kitchen making her recipes for Burger Buns and Kachapuri next.PS. The rolls are even delicious reheated. Just 10 sec in the mw and they’re soft and fluffy just like fresh out of the oven!

I was thrilled to receive this cookbook. It’s everything I anticipated and more. The quality of the book is excellent. It is a well made, hefty size book with thick pages that are made of good quality paper. The content is absolutely wonderful. I like the brief introduction, the many photos, and the delicious recipes. I did not come across a recipe that I didn’t like. The ingredients lists are short and simple and the instructions are clear and precise. I recommended this book to my sister immediately upon receiving it. She took one look at it and quickly ordered a copy for herself. I am very picky about my books being in excellent condition. I received books from Bolo in the past that were made of the same material as this book. They either arrived scuffed or became scuffed once handled. I think this cookbook would be listed at twice the price if it wasn’t for the complaints about that. I’m actually glad that I previously received books in similar condition so I was aware when reading the comments that it is a minor cosmetic issue and it will not affect the quality of the book. Consequently, I did not hesitate to order my copy. I am thankful that I ordered this lovely cookbook and excited about making the recipes!

i Love this cookbook. So many new to me and my family recipes. Things I would never ordinarily try. I started following Betul on Instagram and I would watch her make so many delicacies in such a beautiful fashion. I would save her reels and try to keep going back to the recipe she puts out.. but I found her cookbook for an amazing deal one day and had to have it. I highly recommend if you don't mind getting back to the basics and making so many amazing dishes.

Ooooo! This book is an absolute delight!! It is beautiful and well laid out. It has a wonderful variety of recipes from all over the world (not just Turkey and that region). It’s a repository of all my favorite recipes or ideas for winter baking all in one place. And you can tell the author has made these a million times and has worked out all the kinks (so you don’t have to). I am so glad I bought this book!!

The quality is simply stunning. From the moment I opened it, I was impressed by the luxurious feel of the thick, glossy pages and the vibrant cover design. The photography is absolutely gorgeous - each dish is beautifully styled and photographed in a way that makes it look incredibly appetizing. The recipes themselves are clearly laid out with easy-to-follow instructions and helpful tips.This book would be a fantastic gift for both experienced cooks and those just starting out in the kitchen. I highly recommend it!

This book is a must when you want to learn the basics of the Turkish cuisine. Whe I opened it, I fell in love. The case of the book, is made of a fabric and the pictures are AMAZING. definitely recommend it if you like Cottagecore, Prairie, medieval, old school but also modern recipes. This book is the perfect combination of all. I hope she wil make make books like this cause I will be buying them
