Anita was one of the first bakers to befriend me and inspire me on my sourdough journey. She had written Sourdough Mania a few years back and I was patiently waiting for the English translation. As soon as I caught wind that it was available; I bought it. Now, where to begin...She includes beautiful pictures of many of the grains sourdough bakers use, as a visual tool for those starting out. She has a chapter explaining the different "grades" or types of wheat flour found in Europe, from the UK to Germany, France and Italy. Here in the US, I would stick to the UK description of flour which more closely resemble the AP and bread flour available in our stores. Anita, also talks about milling at home. I highly recommend it. Milling allows you a wider variety of flours at your disposal. She also speaks to the benefits of sourdough baking; not only on the body but also how well the breads keep. Her explanation of baking percentages is super easy. Once you understand baker's percentages, you can start experimenting and writing your own recipes. She even goes into a few different leavens such as stiff sweet starter, gluten free and wild yeast. Her stiff sweet starter recipe resulted in the beautiful chocolate babka in the photos above. Anita is a master baker and part of a very elite group; The Quest for Sourdough. Aside from being a master, she is an incredibly humble and beautiful human being. My next bake will be one of the many rye recipes she has included in her book. I highly recommend purchasing Sourdough Mania.

I have been waiting for the English translation of Sourdough mania for 2 years and it did not disappoint. It reflects accurate research , exquisite photography, the answers to many unanswered questions and a plethora of recipes I've not seen in any of my multitudes of bread books. Good recipes. Good information about sourdough science. I found it difficult to use due to the fact that US flour is different from authors homeland. Information was given to compensate for the difference but I am a newbie to sourdough and have a hard time with percentages. I think once I get the concept of bakers percentages I will enjoy the cookbook.

My sister loved this book so much she kept getting it at the local library. She says it's the only and best book she needs for making sourdough bread. I browsed the book before I gave it to her and the quality is amazing with beautiful full color photos. I'm debating buying another for myself. Anita's book is informative, fun and definitely a must-have for anyone interested in sourdough! I don't think I would have kept up this interest of mine if it had not been for her book.I even got one as a present for the firend who had me starting this kind of natural baking and she is finding so many things she did not know about this art and the recipes are great too!
