This is my new favorite cook book. Easy to follow directions, beautiful photos, and healthy ingredients. Some recipes do call for seasonings that you might not have on hand like saffron, dried mint, za'tar, and harissa They were easy to order online.

I needed another new cookbook to inspire me while at home during covid--and for tasty Lenten meals. Friends, this is THE Book! How many cookbooks contain recipes that you find appetizing, healthy, and don't involve complicated preps or loads of special equipment. May I recommend the Basque potato leek soup? It's a hit with everyone! The asparagus with pasta was great--and I simply cut out the half and half (lactose intolerant) and it still was spectacularly delicious. The asparagus and barley soup will be next! Ah! I love this cookbook so much that I am gifting it to others who will adore it.PS When I made the asparagus and barley soup, eating it transported me into a fine dining experience in my own kitchen. I couldn't believe that a recipe that simple resulted in such a sophisticated and tasty dish!

This is a great book to have if one wants to add more vegetables into one’s diet while exploring flavors from around the world…and without spending too much time in the kitchen. The recipes are written in a clear and concise manner and every dish is accompanied by a photograph. I originally borrowed this book from my local library, but I liked it so much I purchased a copy for my home cookbook bookcase. I highly recommend the Thai-Style Coleslaw with Mint and Cilantro on page 46. This salad is great as written but it also lends itself to substitutions, such as broccoli slaw instead of cabbage, snow peas instead of snap peas and peanuts in place of cashews. Don’t be tempted to eliminate the radishes even if your not a fan as they are integral to the overall flavor profile and add the perfect zing to this dish.

I thought the recipes in this book would be more like America's Test Kitchen, and be a bit fussy and longer to make. However, I have made 4 or 5 recipes and all took under 30 minutes and were pretty simple to make. The one odd thing is they often tell you to put minced garlic on things that are then going to roast in a hot oven. That would burn the garlic so I opt for garlic powder instead.

Love this cookbook and have no regrets re purchasing. Definitely recommend to those who want veggie forward recipes, with bold flavor and international flair.Some other reviews have expressed concern re layout and organization. I’m inclined to agree. Layout and organization of recipes is a weakness- but not a dealbreaker. The recipes are outstanding. The cookbook does not include nutritional information which is disappointing.If you love veggie forward cooking, you won’t regret purchasing this book. Definitely recommend.
