Santosh Shah I commend you for putting this book together. As a first gen American-Nepali this book is invaluable as it allows me to recreate dishes from my childhood. I’ve always had trouble recreating my parents’ dishes as they cook very much so by “feeling”. This book has helped develop a stronger understanding of Nepali cuisine.

Intrigued by Napal I searched cookbooks and glad I found this one. So much detail and the recipes look great. I understand, now, that the flavor profiles are different than the Indian cuisine. Can't wait to learn more.

The book has wonderful generic recipes but no specialities of his from Masterchef or the US tour. There are 100000 videos of generic dishes already. I was looking for specialities or his version of dishes which don't exist in the book.This is for someone looking to start tying Nepalese dishes.

I tried the Urad Dahl recipe. The picture looks great but really - 100 gms dahl and 800 ml of water in a pressure cooker gives you very watery soup not dahl.

Chef Santosh Shah has written a fantastic cookbook. He has gathered the most unique to most popular recipes from all parts of Nepal and put a touch of his own genius to make into a master dish. I have tried many of the book's recipes and have been amazed every time. The chicken momo with the hint of Lemon grass is to die for!

I have been waiting a long time for this book, and am not disappointed. It has a great range of recipes and I am so glad that Santosh did not change his cooking to make it “accessible” as some of the negative reviews on here are saying. This is genuine Nepali cuisine, it is not going to be accessible if you’ve never cooked anything like it or live near an ethnic grocer. Yes I’ve had to travel to look for particular ingredients, but I don’t mind - the results are unlike anything I’ve made before, just mind blowing flavours. Made the Bataka wada with karela chutney last night and the combination of sweet potato dumpling and bitter chutney was inspired. The vegetable rice was also knock out. As someone who has grown up cooking Indian food I thought I understood spicing - Santosh shows that I have so much more to learn. If you want to make great Nepali food, buy this. If you want to make westernised Nepali food using only things you can find in your local supermarket, don’t bother.
