If you've ever bought fresh lychees you will know that they are expensive and (if on a lower income) for a once in a while treat. Due to the large stone in the middle of each fruit, and the texture of the surrounding flesh, you'd have difficulty in separating the two. A much easier solution is to buy them tinned, as it doesn't impair the exotic perfumed flavour and the stones have been removed. There is an option to purchase a single tin, it's expensive...so why not buy a case instead and share them out with your family and friends?The lychees can be used in several ways, but my favourite is as the base for a fruit salad into which I'll add a selection of fresh fruits or a mixture of fresh and other tinned fruit (but only the sort that's been canned in fruit juice, not syrup). I would suggest using very little liquid from tinned fruits if it is described as light syrup. Far better to mix the fruits first, then top up the liquid with them by some apple juice as this works well. Then, if for a special occasion, you can add alcohol of your choice to the mix...I rather like Kummel, a herbal liqueur, but go easy as you don't want to mask the beautiful exotic perfumed flavour of the lychees.
