  • Microbial coagulant, mucorpepsin, produced by submerged fermentation on a vegetable substrate with a select strain of the fungus Rhizomucor miehei kept under contained conditions and not present in the final product. This is a double-strength microbial rennet that does not contain animal foods. Non-GMO and gluten free. Microset microbial rennet derived from Mucormiehei. This rennet is suitable for making vegetarian cheese. Use 1 Tsp (5 ml) for 2 gallons of milk. Add directly to milk. >How to use Microset 50ml> 1.Warm GRADUALLY, on LOW HEAT 2 Gallons of milk to 95°F (or depending on cheese type). 2.Add the 5ml of rennet to the warmed milk and stir for up to 1 min to ensure that it is well mixed. 3.Leave the milk to stand with NO STIRRING or AGITATION until it has set (approximately 45 min) For smaller quantities of milk use 2ml of rennet only.

    Directions

    1. Gradually, heat 2 gallons of milk to 35°C over low heat (or depending on the type of cheese). 2. Add the 5ml labs to the warmed milk and stir for up to 1 minute to ensure it is well mixed. 3. Let the milk stand without stirring or stirring until it is dried (approx. 45 minutes).

    I make a lot of cheese and this rennet has served me well. I mostly get a good curd set and superb curds if I've splashed out on raw milk. It lasts well in the fridge. I've made many styles of cheese including chevre, blues, brie and hard pressed cheeses. Being double strength it lasts twice as long so it's good value too.

    Made curds and whey not made it in years, couldn't get veg rennet in small quantities and just made a soft cheese.

    I made cheese hundreds of times with different brand and never had a problem! This is doing absolutely nothing to the milk! Nada! I don't know if is out of date as there is no date on anywhere! Absolute waste of time and money! Also a waste of delicious full fat milk from our local farm.
