Lookup the compango asturiano recipes on youtube - they are all in Spanish but are great. You need to sift off the oil from the sausages during cooking otherwise it will be too greasy. Slow cook in water with tomatoes for at least 2hrs, preferably all day - keep topping up with water and simmer it off.

I made a classic Austurian Fabada with this. Good taste, good texture and not too salty. Don’t feel tempted to add a stock cube because this Compango is full of flavour. Remember to remove the thin plastic coating from the chorizo to release its flavours into your stew! Yum
