    Discovering hibiscus: tangy, delicious recipes

    1. Bissap

      Bring 1l of water to the boil, add 20g of hibiscus flowers and allow to brew for 10 mins. Remove from the heat, filter and add 100g of sugar, or sugar to taste. Add a sprig of fresh mint, the juice of one lemon and a spoonful of orange-flower water (optional). Mix well and allow to cool. Chill for at least 2 hours. Serve cold with ice-cubes, a few mint leaves or lemon slices.

    1. Warm drink with hibiscus and cinnamon

      Brew 15g of hibiscus flowers in 500 ml of simmering water. Add a cinnamon stick, a few slices of fresh ginger and a spoonful of honey. Allow to brew for 5-7 minutes and enjoy warm.

    2. Hibiscus & ginger cocktail

      Brew 10g of flowers in 250ml of hot water. Add ginger syrup, lemon juice and sparkling water. Serve with ice.

    3. Hibiscus jelly

      Boil 1l of water, add 30g of hibiscus flowers, allow to brew for 10 minutes, then filter. Add 200g of sugar and the juice of half a lemon. Bring to the boil, add 2g of agar-agar and allow to cook for 2 minutes in order to activate the gelling agent. The jelly will set as it cools.

    4. Hibiscus ice lollies

      Boil 500ml of water, add 20g of hibiscus flowers and allow to brew for 10 mins. Filter, then add 50g of sugar (or honey) and the juice of half a lemon. Mix well and allow to cool. Pour the tea into ice lolly moulds, and you can even add mint leaves or pieces of fruit. Place in the freezer for 4 to 6 hours. Tip: add ginger or citrus zest to make your lollies even fresher!

    5. Hibiscus cake

      Boil 10g of hibiscus flowers in 150ml of hot water for 10 minutes, then filter. Mix together 150g of sugar, 3 eggs, 100ml of oil and the tea. Add 200g of flour, 1 sachet of rising agent and a pinch of salt. Cook in the oven at 180°C for 35 mins. Allow to cool before tasting. Tip: add dried flowers into your cake mixture.
