Native Vanilla beans bring a tantalizingly delicious flavor and aroma to any recipe. Our Pacific Trader Tahitian Extract Vanilla is hand-selected from the finest curing processes by our micro-farmer cooperative in Papua New Guinea and are certified Grade B, premium-quality vanilla beans. Grade B vanilla beans are shorter with a lower moisture content of 15-20% and are perfect for making vanilla extract. Store the fresh vanilla beans in an airtight container, preferably a glass jar. Keep them away from heat and in a dark place such as a pantry or dark cabinet. Do not refrigerate the beans, as this can cause them to mold.

A large outlay but left to mature for a few months results in a 70cl bottle of home made vanilla essence that will last a long time even for a keen baker. Quality vanilla pods are not cheap and to get these at 80p a pod is a real bargain. I've been making my own essence for years and it costs less than half the price of the quality brand name ones. The vanilla smell was lush even before I opened the pack, and as there was a sticky residue in the empty pack, I spooned in some caster sugar and shook/rubbed it into the residue resulting in a couple of ounces of vanilla sugar.

I bought the vanilla beans with the intent of making my own vanilla extract by simply slicing the beans along there length, and then fully submerging them in vodka. I was wary about the possibility of the beans being mouldy though, as I'd read some reviews from various similar products that mentioned mould, as well as some that mentioned the beans smelling strange.The beans I ordered looked just fine but when I opened the packaging, there was a distinct and unpleasant artificial plastic like smell.... it was almost like a vanilla scented cleaning product or something.The reason I'm writing this review is to say that if, when you open your vanilla beans, they too have an unpleasant smell. Then unless they smell of mould, I'd recommend persevering with them because, after a month in vodka, the odd smelling beans that I bought are now smelling absolutely wonderful. Far better than the cheap extracts you get from the supermarket.I'd say that the initial, unpleasant smell was actually coming from the packaging and the packing process. One word of warning though... it took quite a few washes to get the staining out of my chopping board, where I had sliced the beans open.

Comes air sealed so you have to be carefull to not leave them out for long becaus they will develop mould . Straight into alcohol for tinctureing.

Outer packaging smelled of vanilla however inside smelled of mould. On further inspection under the sticker I found mould infestation. Unfortunately this whole batch stank of mould / wet socks and no scent of vanilla. Vary sad and disappointing.This could have been a great volume for money if the quality would check out.

Decent-sized Grade B Vanilla Beans
These beans were my very first vanilla bean purchase, and I decided to buy beans because the price of prepared vanilla extract has gone up drastically since I last bought a bottle.Making vanilla extract is about a simple a recipe as one will ever have in the kitchen (besides boiling water for tea), so I decided to give it a try.The beans are Grade B, being slightly more dehydrated than Grade A, and are thus more well-suited to extraction than a Grade A bean. (Grading doesn't imply lower quality, just lower hydration.)All the beans in my package were uniform and free of defects, and the vacuum seal was intact on arrival. When I sliced into the bag, the vanilla fragrance was intense and pleasant, and last for hours on my fingertips.NOTE ON EXTRACT RECIPE: While the supplier offers a recipe for making vanilla extract that uses a ratio of 6 beans per 1 cup (8 fl. oz. or 237 ml) of vodka (minimum of 35% APV or 70 proof), I found a recipe from the test kitchens of Cook's Illustrated magazine that uses far fewer beans for the same quantity: 1 bean in ¾ cup (6 fl. oz. or 177 ml) of 80-proof (40% APV) vodka. In addition, the Cook's Illustrated instructions include heating the vodka nearly to boiling in a saucepan (carefully, to avoid ignition of the alcohol vapour), then pouring the hot vodka into the container holding the beans. I imagine that using hot vodka amplifies the extraction process, so that far fewer beans are needed per batch.Reviews for the Cook's Illustrated recipe say that it out-performed commercial vanilla extracts. I suppose I'll know after about four more weeks of patient waiting.
