"[The] salami and white bean toast is an instant addition to my lazy-dinner repertoire, even though it doesn't taste lazy at all, and I eagerly await the opportunity to make Freedman's pimento cheese and tomato finger sandwiches during peak tomato season...Freedman's recipes feel like a really fresh update to what some might call "girl dinner" -- instead of subsisting on multiple handfuls of popcorn, you can now reach for an upgrade."--Amy McCarthy, Eater

"As a parent to growing teens, I struggle with dinner ideas that meet my kids' expanding palates, evolving appetites, and wild schedules--all while feeding myself well, too! With creative recipes in a variety of "snacking styles" and its gorgeous photographs, Snacking Dinners has my family saying: "Let's make THAT for dinner!"--Sarah Powers, co-host of The Mom Hour podcast and co-author of The Mother's Gratitude Journal: An Easy Guide to Capturing Everyday Joys and Milestone Moments

"As someone who prefers expanded snacks for dinner, this book is exactly what I want to eat. Mix Match Potato Bites? Yes, please. Burrata with Fruit, Pesto, and Crostini? Sign me up! I want to live in these pages full of colorful produce and gorgeous tablescapes. Can't wait to cook my way through this book!"--Erin Gleeson, artist and NYT bestselling author of The Forest Feast

"Finally, permission to snack for dinner! And why not? As Georgia Freedman proves, dinners assembled from favorite nibbles are fun, versatile, satisfying, and best of all, easy. Here is a cookbook tailor-made for people with busy lives who also love good food. Sign me up!"--Emma Christensen, Simply Recipes and The Spruce Eats

"Snacking Dinners is brilliant! Freedman brings the joy of a quick and simple dinner to the next level. The book is filled with delicious recipes and is truly a must-have in every kitchen."--Elizabeth Poett, host of Ranch to Table and author of The Ranch Table

"This book is both a validation of the cravings and whims that hit when we get the chance to eat exactly what we want (without worrying about anyone else), and a gold mine of simple, inspiring new ones. In Georgia's reimagining and liberation of the quick and easy dinner, yes, a cheese plate can be a joyful, satisfying meal, but so too can glammed up tater tots, spicy hummus, or an entire tray of bruschetta."--Kristen Miglore, author of Genius Recipes, Genius Desserts, and Simply Genius

"This tidy book is filled to the brim with recipe ideas like Okonomiyaki Tater Tots, Sweet Potato Chip "Salad," and a vibrant antipasti board. They prove that minimal can still mean thoughtful, delicious, and beautiful." --Carly Westerfield, Bon Appétit

I’m particularly obsessed with her ideas for jammy eggs (see pic), and recipes inspired by her deep knowledge of Chinese cuisine, which turns dead-simple preparations into big flavors by using staples like chili oil, black vinegar, instant noodles, and blocks of tofu. Pantry staples aside, it’s making me want to eat more veggies because they all look so gorgeous in this book. I’ll be gifting Snacking Dinners for the foreseeable future!

Sophisticated Snacking Recipes for Multiple Purposes! Love This Cookbook.

While the title of this book is Snacking Dinners, the recipes in this book have so many uses—as appetizers for cocktail parties, brunch dishes, mid-afternoon pick-me-ups, side dishes for more fulsome meals, and of course for snacking dinners. I love the use of international ingredients that elevate the dishes with great flavor profiles. I absolutely love the roti pizza (I had never used roti before, but they make a great pizza base)! There is a global pantry glossary in the back to provide more information on some of the international ingredients. The photos are beautiful, and the book is full of tips for stocking your pantry, and combining the recipes in the book in various ways and for various occasions. The book packs a punch beyond expectations for a book of this size. It will be a go-to resource for me for many happy occasions, large and small.

Amazing flavor combinations, amazingly easy!

As I read through the recipes in this book, two main thoughts kept popping into my head: "Wow, I've never considered putting those two things together, but boy it sure sounds delicious!", and "oh, wow that's super-easy and I could make that tonight."Burrata with fruit and pesto? easy and delicious.Queso with chili crisp and sichuan peppercorn? Yes please.OKINOMIYAKI TATER TOTS? Ingredients immediately added to my next shopping list.I just made the kimchi melt since I already had all the ingredients (which is kind of the point of the "pantry snacks" section), and it's 1000% going to the top of my "crap it's 830pm and I haven't eaten yet" emergency recipe list.(To the cranky reviewer who says there isn't anything here they don't already make--do you really feed your kids mango chaat on a hot dog bun in the back of the car? 😂 Though the smoked salmon onigiri would actually be perfect for that...)

Very disappointed

There is nothing in here that I don't already make for snacks. Hardly any would qualify as enough food for dinner (maybe some sustenance with the kids in the car on the way to their next activity...)I am really disappointed, and am asking for a refund.

The coziest, most satisfying cookbook I didn’t know I needed!

Snacking Dinners is a revelation — it makes you feel like you’re treating yourself with every bite, without any of the stress of a traditional dinner. Georgia Freedman somehow captures the magic of those nights when you just want something delicious, effortless, and fun.The recipes are clever but unfussy — think charcuterie boards with intention, quick tuna hand-rolls, or toast that feels like a luxury meal. Everything is easy to scale if you’re feeding others, but honestly, this is my new go-to for solo self-care dinners and weeknight wind-downs.A cookbook that feels both indulgent and approachable — it’s now a staple in my kitchen. Highly recommend to anyone who loves to eat well but hates overthinking it.
