Description:

AS SEEN ON SATURDAY KITCHEN AND SUNDAY BRUNCH

ONE OF THE EVENING STANDARD'S BEST COOKBOOKS OF 2024

With honesty and curiosity, British-born Omani-Zanzibari chef Dina Macki explores the unique foodscape of Oman, in the first Omani cookbook to be written by an Omani chef.

Bahari, meaning "ocean" in Swahili, is a culinary exploration of the rich flavours and history of Omani cuisine, a food culture shaped by boundless coastlines and complex maritime history, with origins and influences spanning Pakistan, Iran, India, the Swahili coast, and Portugal.

In this distinctive cookbook, Dina Macki travels across Oman and Zanzibar, unearthing regional delicacies and recreating the food of her heritage. With more than 90 recipes for meat, fish, and vegetables, homemade breads and dips, desserts and drinks, Macki invites us into her kitchen, showing us how to create exquisite Omani dishes at home. Tapping into the stories behind the recipes and ingredients, Macki brings a fresh perspective in nuanced essays and identity exploring how food connects us to our past and our communities.

Review

"A thoughtful, beautifully photographed book that will be enjoyed as much as a cover-to-cover read as a cookbook." -- Mark Diacono ― Delicious Magazine

"Well, I didn’t know that what my library sorely needed was a book on the food of Oman but, having studied and savoured Bahari, I am now the wiser and realise that my cookbook collection would be inadequate without it." -- Nigella Lawson ―

5.0 out of 5 stars A must-have for every kitchen shelf!

Beautifully written and thoughtfully organized, it offers more than just recipes—it tells stories, shares traditions, and invites readers into the heart of the kitchen.

5.0 out of 5 stars Unusual cookery book

5.0 out of 5 stars A delightful and instructive read

A beautifully written book. Much more than a cook book as it gives you a whole feast for your eyes as you read from the authors view, how she came to write about the mix of cultures we know little of and how food influences her recipes. If you like learning about other cultures and want a new arsenal to your repertoire of foods to make then this is for you. Whoever said the foods from the book are bland and underwhelming did NOT try any of the recipes I believe. Far from being dire the recipes are a delight to the taste buds. Some take more work but the results are worth it as I go to soak some black eyed peas overnight for the moreish falafel formerly known as bajiya ya dengu. To be served with the coconut chatini - I am drooling at the thought!

5.0 out of 5 stars Excellent book - stunning!

An absolutely brilliant authentic book with beautiful photography. Having visited Oman a few times this really is a truly represents the cuisine and culture

4.0 out of 5 stars Intriguing with a dash of Confusion

K.A.B. · 14 February 2024

Although I'm no expert, the ingredients used in Bahari's recipes feel very authentic and the images and information about the region are very informative. The review lost a star for me for three reasons. Although the index does list most recipes by main ingredient, there are a number with just the name of the dish, so having to flip back and forth (Not sure what Mandhi is on page 226 because the recipes on that page don't seem to coincide?). Not all the recipes have pictures and it's a photo that often acts as a visual enticement for me to cook a dish. Lastly, the recipe for Pomegranate& Honey Beef Short Ribs (yum) gives instructions for cooking in the oven. However, in the Cooking notes the author states that their preferred cooking method is in a slow cooker or instant pot, but didn't include the instructions for those methods.Having said all that, if my nit picking issues aren't yours, then there is much in Bahari to inspire.

5.0 out of 5 stars Splendid Oman

W. · 27 March 2025

Beautiful book, very readable. I lived in Oman many years ago. Haven’t tried the recipes yet

5.0 out of 5 stars From Oman to Zanzibar

P.S. · 13 March 2025

Wonderful book . Great “different “ recipes with an interesting narrative. An atmospheric cookbook.

5.0 out of 5 stars Extraordinary new flavours

P. · 31 July 2024

Had this some weeks and now that I’ve cooked many of the recipes it was time to review. First of all, visually, this book is beautiful. The photography of the food and Oman and Zanzibar are stunning. The recipes are remarkably simple and I was delighted to see quite a few fish recipes. The flavours are a mixture of Middle Eastern crossed with some flavours typically found in Southern India. The flavours are a delight. If you are interested in discovering new cuisines this book is perfect.

More than a cookbook- A photo Journal

A beautiful cookbook on the rich culinary history of Omani food. I can’t wait to try one of many recipes I have marked.

Great book

Great book, something unique

It's an AMAZING Cookbook

A.C. · 26 March 2024

I love how this truly AMAZING cookbook is filled with fantastic looking recipes, beautiful photos, and personal stories about the food.

Emphasis on BEYOND

A.T. · 12 August 2025

This book suggests "Recipes From an Omani Kitchen and Beyond" the emphasis is definitely on the Beyond. It is a mish-mash of recipes from Oman, Zanzibar, and Great Britain. The pictures are of good quality, and the recipes are good (if a little bland, probably for English tastes) but there is far too much fluff and too few notes on the actual food. If you are actually interested in Omani food, I would suggest "The Food of Oman" by Felicia Campbell.

Love Love Love This Book!

I have not cooked out of it yet as I have not long received it but my son has, who also purchased the book and has loved what he has cooked so far. There are SO many things I will cook out of this book for sure. Too many to name but pretty much everything. One of my great purchase for a little while. I'm very happy
